I did this on our Pygmy A17 but did the Guillemot with glass first. On the Pygmy we used two 1/4" plywood rings to offset the hatch for the gasget. The next one I'd use the baltic at 3/32", most hobby shops have the thin stuff and you could laminate them to match the deck curve.
