If your question were which paddle is easier to make, I would definitely say the Greenland is significantly easier. Since your question was: Is it a mistake to try to make both, I would say definitely not. You will learn more about paddles in general by making two distinctly different paddles than just choosing the easiest one and making two of them. A Euro paddle is a more involved project, but you will learn a lot from the task.

It would not be a mistake to make both. If you are looking to make a good quality paddle quickly and easily, go with the Greenland. You can make a very high quality Greenland paddle in a day. A well-made Euro will take substantially longer, but the effort will be worthwhile even if you decide you like Greenland paddles better.
