I have used paint stripper, but it will also remove the epoxy right to the cloth if not careful. I prefer to use the good old cabinet scraper. A little more work, but this way you also get a smooth finish. Varnish will likely peel off as a yellow colour and once you hit resin, it should be lighter. You will know the difference on your boat once you get into it.
