When I built my Coho, I also called System Three and asked the same question. I was told "in as little as 3 days, but a week is plenty" I varnished in one week. That was 5 years ago, no problems. I have not waited longer than 2 weeks on any of my boats. I always use Z-spar captains or flagship varnish.
