Thomas- I'm 90% done with my Guillemot Double and my 2 cents worth says to use a table saw and forget the planing. I cut all the strips in about 2 hours and another 3 to bead and cove. You will take off a fair amount of material during the fairing / sanding process so it is my opinion that planing at that stage is a waste of time. With a thin kerf blade on your table saw there is minimal waste (1/16") and the thin blade cuts cedar like butter.

One point to remember (that I failed to follow) is to keep your strips for each board grouped together so you can scarf them together later and the wood will match because they came from the same board. A tip from this board came in handy and that was to scarf the strips as you apply them in postion as this allows you to vary the scarfs so they don't line up over one another.
