I can understand how you feel. I want my boat perfect also. Fact is...it's not. But it's good enough. You have several options. If you are determined to sand off everything then I suggest you experiment with spot sanding, tinting, etc. before you do the whole enchilada. You might hit on something that will work. If not...then sand away. I don't think you need to sand all the epoxy off. In my experience you only need to sand for uniformity of color in a case like this. Water applications will help you see differences in color. I have even sanded, discovered a spot that wasn't uniform, applied epoxy on that spot and wiped it out until I got it fairly uniform. Once you get it done, though...don't forget to tell us what you did and how it worked. Some of the rest of us may make a similar mistake in the future.
