If you are using MEK you aren't using epoxy, but that's OK. If it stinks to high heaven it is polyester. You may be able to mix up a "hot" batch of resin with too much MEK and paint it on over the slow stuff and help get it to kick. The downside of this is if the stuff under the new coat does not kick it is harder to clean, but I expect you can force it. Also get the boat warm to speed up the reaction. But don't use open flame to warm it polyester contains a lot of solvents which are highly flammable.
