If you sand your epoxy coat and are waiting, I would wash it down with a scotch biright pad and a tiny bit of detergent prior to varnishing. Just in case there's a little blushing going on. I don't trust "no-blush" epoxies, even though I use them. It's like "waterrpoor", "water resistant" and "submersable". Does "no-blush" mean no blush or a standard that qualifies the term? Blush under the varnish will cause it to take a long time to dry or possibly not at all. It only takes minutes to wash it down and it always makes me feel safe.
3 coats of varn will get you to the satisfaction point. Sand with 350 grit or higher proir to that last coat. I like wet sanding because it doesn't clog the paper.
