Thanks everyone for the replies. I really appreciate the ideas! I think I'll go with taping off the deck area where the hatchs will go and use a jig saw to make the cut. This, I hope, will minimize scratching and tear out on the deck (which is already varnished - the hatches are a second phase and I wanted to start paddling)

As for the next boat, yep, it seems that once you start building these things, it really gets in your blood. I keep telling my wife that she "needs" me to build her something that will keep up with my Pygmy. So another S&G is probably in order. She liked paddling a CLC 16. I'd like to eventually step up to a hybrid ( I really like Jim Kozel's Cirrus project so I'm thinking about that boat) and then finally (gulp) a full blown stip boat. Guillemot perhaps, as the shop is local to me and this site is so helpful(as was Nick's advice during a coaming difficulty I had with my current boat).
