S&G: Glassing over the bow and stern

I'm pretty unclear about what you do when you get to the ends of the boat. John Michne's Fiberglassing 101 says not to try to wrap around the ends with the glass but just glass up to the end. He also says you can cut a little strip out to glass over those "stems" if you want. I'm going to put brass stems on both ends and run them about 2 feet down the keel on each end.
So do I cut a "v" out of the glass on the ends so it lays along the side? Wish I could draw a picture. This is a stitch and glue canoe so there aren't any stems. It just comes together at the ends.
Other S&G builders - canoes or kayaks - how did you do the ends?
