I would prefer to use water in the hydraulic lines, hydraulic fluid can be pretty nasty. for these low pressure systems, there is not much reason to use the high pressure/tempature oils that are used in brake lines. however water may cause these components to start to rust.

Low pressure pnumatics is pretty much a waste of time, and the expense of carrying around a comresser would be problematic.
