I keep a few of these knives around: one in my shoulder bag, one in my kayak stuff. They are the classic French picnic knife. The blade is a very high quality carbon steel and the mechanism is so simple that grit won't really hurt them. The blade locks in place by rotatiing the metal collar at its base. They're cheap enough (under $10) so it's not a heartbreak if it goes overboard or in the bucket at airport security. I wouldn't hesitate to grind a little rust away on a beach rock...
They ship extremely sharp and hold up pretty well even though they aren't stainless. Search the Lee Valley site using keyword "Opinel".
