I wouldn't say thin, thin coats. Maybe "thin" coat What you are doing is trying to fill the weave. Just brush it on with out getting massive waterfall runs.The fill coats will go much faster and easier and use much less epoxy. After you brush it on I generally brush out drips as they come up, and wait for it to begin to stiffen a little before squeeging it around(I do worry at it too much). For glass and fill coats I only use the slow hardener. I also don't know how fast you are talking about, but I recommend getting more of the slow hardener and take your time. Relax...I do the whole boat by myself with no problems. Everybody sometimes has problems sometimes. You are continuing forward and doing very well. Ideally you should run out of both components at the same time.
