Stitch and glue kits give you the entire boat, cut out and ready to build - it saves a lot of lofting and the sections are computer cut and very accurate.

Strip built kits give you the forms, cockpit lips and enough strips to build it. Usually the strips are not full length - 12ft or so. But no milling of strips.

The greater percentage of strip builders cut their oen strips because you can cut full length strips if you want and choose your wood colors etc. They would rather save the kit money since it is a woodworking project and woodworking is what they want to do.

As far as saving some money by building your own - if your time is worth 10 cents an hour, yes, you will save money. Make no mistake, building a kayak is going to take a lot of dedication, time and involvement.
