Hi David, I don't think anyone has made this far-fetched suggestion so far: inquire (right here) if anyone living in your area is presently building or plans to build a kayak (or even a canoe) and would let you "help" them doing the work. Some steps of the building process are sometimes easier with a bit of help and you could learn a lot.
