I just finished a kayak with the Nick style coaming.
When the coaming was done (and too high) I glassed the inside from under the deck to the top of the inside coaming.
Then I glassed the outside coaming from the deck up the outside. Later ran a filet over the glass joint at the coaming and outside deck.
Then I added an oak lip. Made the coaming top flush and just coated the lip and entire coaming. As Pascal said, I kept feeding the coaming top (end grain) until it wouldn't take any more. It sucked up a lot of continuous coatings.
Then a few sandings and more epoxy coats finished it. No glass over the lip. It's oak and a strong as can be especially with several coats of epoxy over the entire thing.
