Seems to me the market is limited in any given metro area, tho if paired with a woodworking club as previously mentioned it might be workable. The community that could form in such a place would be very neat - kind of a tangible version of this forum. And cross-pollination with traditional woodworkers could yield great results (somebody turn up some toggles for me?)

When I first considered building, I was concerned with space (have to kick the wife out of the garage to build.) My minister, who's also a boatbuilder, offered use of the church basement. I declined - if I had to drive somewhere to build, it'd never get done. I think a lot of folks would bring that mindset, but if it were a 'real' place like this forum, maybe it'd bring them out. A class offering could help build that.

Of course, a liquor license would guarantee success, but we know the perils of sharp tools and smooth beer.
