Sometimes our eyes fool us into seeing deviations that aren't there.
First make sure it's in fact NOT straight. Put the boat, keel up across your building supports. Attach a piece of wood to the bow with a clamp so that a length of string (attached to the piece of wood)is centered over the keel at the bow water-line. Run the string aft to the stern, just above the keel. Holding it taut, you will have a straight line frame of reference against which you can evaluate the keel line. That should tell you if you've any deviation on your keel line, and if so, how much.
