Oil is a great way to go. Paddle with varnish or epoxy finish tend to do blister on the hands on long run. Paddle with oil finish don't. With the return of traditional kayak a lot of people use the simple mixture of 50/50 linseed oil / turpentine. The turpentine allow the oil to be absorb more easily by the wood. You can go to the qajaq USA website to hear more about this, but it has been use succesfully on western red cedar, mahogany, pine and other type of wood.
