I just used Watco Danish Oil on my spruce GP. It looks good with only one coat on it so far. I figure the oil is cheap, oiling it is easy and it looks good. With the oil on it, if I decide I need to trim it up a little, I can do so knowing all I have to do to regain my nice finish is to oil it again. No worries!
