I have done it both ways. I don't have problems either way. But...when you are going to have a visibly measured amount of stock removal, such as when fairing the strips, it is much easier to just let it dry and plane/sand it off after it is hard. When you are planing/sanding/fairing the boat you can see when the glue is gone. Wetting the wood will further show where it is if you are not sure.
