Although an epoxy job that was stopped part way through will never look as good as one done in one-step it shouldn't suffer much in strength. Since it is the inside, the looks should not be a big concern. If you have parts of the glass that are only partially saturated you may have problems fully saturating those areas, but with extra effort you should get results that are good enough.

If you want a better looking job that is somewhat stronger you may be able to peel up the partially saturated glass and trim it from the fully saturated.
