All transparent coatings are attacked by UV and will eventually be destroyed.

Plus you've got ware-n-tear on any surface.

The varnish is the sacrificial coating. It has UV inhibitors, and is glossy to reflect light
to extend it's life. So the varnish protects the epoxy/glass from deterioration.

Varnish is much easier than epoxy to sand and recoat and refresh. And varnish is
designed to brush to a level smooth surface.
