Take some thin strips (i.e. 1/16" ash veneer) and laminate them to the back edge of the stern, extending the bottom edge of the stem at waterline 1/2 to 1". Try it with some foam and duct tape first to dial in how much you need to extend the stern stem. You could also extend that forward along the back edge of the keel to maybe 1/4" depth. It will make your boat track stronger, but will also address some of that troublesome weather-cocking.
