I had the EXACT same thing happen with West System fast hardener that I was using to glue up parts. Not only did it get the "grape jelly" tint, but when it hardened it turned to amber. It looked like the stuff on Jurrassic Park. If I could have trapped a mosquito in it I could have sold it as an artifact! It did change the color of cloth on a small test strip I did. I think it is due to heat breaking down the resin over time, but that's just my unscientific guess.
