Unless you're going for perfection on the first try (likely impossible even after several), I'd say the best class is in your garage/basement just building one. I'm a first-timer with no previous woodworking experience other than carving walking sticks on canoe trips, and I started one last fall and I'm nearing completion now. I bought Nick Schade's book "The strip-built sea kayak" and plans for a Night Heron, located some different wood types and found a carpenter with a table saw nearby to cut the strips. I used Nick's techniques and developed some of my own and consulted people in this forum with questions that I had. A short workshop on strip-building might shave a little time off the project overall, but nothing beats seeing someone's face when you tell them you built it yourself from just a book (I usually don't mention this forum:) There's some flaws in mine for sure, but most will only be visible upon close inspection by a trained eye. There are other websites and books/plans that you can find too. Since you're waiting until this fall, you can maybe get a book and spend a little time reading and getting prepared, as well as reading the postings on here to see pictures and hear people's advice. I would always be sure to read any questions/responses relating to a building stage that I was approaching so I could anticipate any problems and be prepared to deal with them.
