Don't do it. The epoxy may look good on a test panel, it won't work on a functioning skin. While epoxy has some pliability, it won't be nearly enough to keep with the flexing that happens to a skin on frame when it's being paddled. You'll end up with cracks that will seep water into the boat. The polyurethane or paint most folks use work by permeating fully into the skin and has the ability to flex with the skin to maintain a water barrier.
