I use Yakima Mako Saddles with my SOF and they seem to work fine in crosswinds. The one caveat is to be careful with how you tie down the ends. I used 5mm rope last time, looped over the bow and tied down diagonally to the tow points under the bumper. What I didn't realize was that the rope could move slightly from wind-induced vibration. When I got down to the launch point, some of the varnish had rubbed off the nylon right under the rope contact point. Next time I think I'll tie off to the stem tip about six inches from the end, with some soft cloth or padding under the rope.

BTW, when are you going to Mono Lake? I'm going up there for Sage's paddle the first weekend in August. Maybe I'll see you there?
