Thanks for being forthright about your methods. Your into something that most of us have no experience in. I'm curious to now how it all turns out.
I never built any fiberglass hulls but I researched the method before I finally decided to go S&G. Never saw any mention of mat use in the literature and never saw any production fiberglass hulls that had mat in them. Some manufacturers have proprietary lay-ups that have a core of foam or other light weight material between two layers of glass. Cored fiberglass or Kevlar hulls are considerd top of the line.
'Glass hulled power boats use mat as a cheap way to stiffen the hull panels. Weight to them is much less an issue than with us who use muscle power.
There is a book called "Building Your Kevlar Canoe" that goes thru' the entire process of cloth lay-ups over a male mold if your interested.
