Congratulations! I am nearly there as well. I figure two days and I'll be doing my end pours. I plan on 3 ozs at a pop, let it set up a bit and then 3 more. I need to bury a u-turn 1/4 copper pipe that acts as a conduit for my end ropes which will enter and exit the bow through the top of the deck so I'm not certain of the total pour I will need to do.

Regarding your pour, maybe pour some into a disposable watertight container and float it in the water you're cooling with to give you some idea of the progress in the boat. Odds are a small amount in a baggie in the cooling water will cure more slowly than the larger pour (and attendant heat) in the bow so the small sample should be on the safe side.
