I cold chiseled and sanded the plywood-layered coaming off my S&G, enlarged the opening back 2-1/2 inches and glued a new, larger coaming on. You can't even tell it was modified. Go for it. I plan on making a recess on my current S&G project. I'll post pictures when I get that far.
