I can't speak to the gunwale problem, so I'll leave that to others.
ribs: Sounds like you are steaming them too long. If you have a good steam supply three or four minutes should be plenty, maybe less. Also, make sure you have straight grain, little or no runout, and shave or sand off the corners. Don't try to bend too tight. 3" radius is good for white oak, in my limited experience. 2" radius is too tight. you may get a few, but most will break.
