For hatches, I would go with the Beckson type hatches that you can pick up cheap at boating stores. VCP types are over kill for your kayak and hard to install. Most of the plate type hatch covers just fit into a hole. Some are screw on lids, some are snap-in. If you sand the surfaces, any marine sealent will work fine.
