I used latex paint on 10 oz canvas . After 3 coats I put it in the water for almost an hour , no water came in the boat. So as long as your not going on an expedition you should be OK with a few coats now and more later.
Having said that your problem will be drying weather!! Latex will not dry properly in damp conditions.A fan may help but it should be dry to touch in 30 min. If its too humid the material will not set up.
