I've only used oil based paints on #10 , 15 oz canvas. It took 4 days drying between coats and I waited a good week for the last coat to dry before using the boat.
That said canvas is very forgiving whichever coating you use. Latex based paint would dry quicker than oil based / alkyd paint. The idea with oil based paint is that you mix in about 25% boiled linseed oil and this keeps the paint from drying too hard so as to remain flexible and less liable to crack. Many other types of coatings have been used on canvas with success.
You could very likely use the coating you mentioned and it would be fine, from the little I know about gloss finishes is that they tend to dry harder and thus less flexible so that is why satin or flat coatings are prefered.
To speed drying coat it indoors ( preferably in the living room so all can marvel at the beauty and put a fan on it
