I'm not an expert here, but I think a lower angle will cut end grain better. The bed angle of the blade also makes a difference, but it's not adjustable. Can't remember, is the bevel up or down in a spokeshave? If the bevel is down, sharpening the blade to a different angle won't make much difference if any except in edge holding ability. I sharpen my paring chisels to 20* and they pare end grain great, but I wouldn't do any heavy chopping with that angle. I tried using my spokeshaves on ash stems, but there was too much chip out. They worked great on mahogany though.
