Something about an unbroken deck says "this boat is about pure performance". The same thing that pops into your mind when you see a 12 cylinder Jaguar; you look at that long hood and know... I've seen mahogany runabouts that give me the same feeling.

I would go for it if you have a really handsome boat and are leaning that way. You could cut hatches later if you want. Or just cut a rear hatch that you can reach from the cockpit; it's a convenient place to store a windbreaker and a six-pack.
