I always wait an extended time before the final sanding and varnish. At least several weeks, sometimes longer. I have waited for three months on a kayak I was testing and experimenting with before adding a final fill/sanding coat...waiting several more weeks...and then varnishing. No problems. I tend to take my personal boats out long before they are finished...and finish as I get to them.
