Everyone has this problem to a certain degree. Keep it spread to the correct size when applying fiberglass/saturation coat, fill coats, and any other coats until you combine the deck and hull. When you combine the two simply spread, or contract as needed with one of the methods...tape, straps, wedges, spreader stick...whatever it takes...until you get a good fit. Then tape whichever side you have set up to tape...I usually do the inside first....and only one side at a time on the inside. I have the boat up on it's side. This is not an insurmountalbe problem...just one of the facets of kayak building.
