Cypress would be a great wood for the stem and stern, I have used Sittka spruce for gunwales and keelson. Ash wood for the ribs has worked well for me. Ash makes the kayak heavier but it steams so nicely. People have used Alaskan yellow cedar for the stringers with great success. Hope this helps.
I just finnished the frame of a Greeny and have done the Saran Wrap test, she floats and tracks real good. Now comes the sewing. Wish I had a digital camera, would like to show this baby off.
