I assume you're sinking that Guillemot L past its design displacement, although it sure looks fine in the picture.

I've been playing around with Ross Leidy's KayakFoundry lately, and when I set the displacement for "expedition" boat, the number I came up with (me + boat + gear) happened to be 390 lbs. But I couldn't get a reasonable hull shape with that much displacement (or maybe I just need more tweaking practice).

Good to know there are options available for us big guys, although I was planning a narrower boat for my next one. My Endeavour (soon to be launched) is 23.5 inches wide.
