Strip: Varnish sanding questions/progress pic *Pic*

I have just put my first coat of varnish on my guilly and have a potentially dumb question. Everything that I have read says to sand lightly between coats. Is this to help the varnish stick, or smooth out the bumps? I was thinking that if I could do 4 coats, then sand smooth, then do the final 2 coats it would cut down on the dust in the shop and shorten the varnishing time. Am I missing something important? I realise that there will probably be some witness lines where I sanded through a coat of varnish, but as I recall these will disapear with the next coat?

Please let me know.

Here is a pic so far. It looks sooooooo much better with the varnish on.
