I put a day hatch in my arctic tern. It is a Viking with a flip-up and twist handle/lock that is much easier to use than the screw types and it seems to be perfectly watertight. I was going to mount a sock on it but instead lined that interior area with minicell making an effective ice chest (after a 6 hour paddle in 90 degree weather it's great to pull out the last nearly frozen Coke for the ride home).

A word of warning though, absolutely nothing will adhere or bond with the polypropelene. I used 3M5200 for bedding and nuts and bolts to keep it in place. The lip is mounted underneath the deck and the lid is covered with mahogany plywood and pine trim.
