Thickening epoxy will also help keep it from running out of a glue joint. Sometimes the description is "the consistancy of ketchup."
For filleting you are probably using "the consistancy of peanut butter."
For high-strength glue joints thicken with high strength fillers, like Cab-o-sil. For light weight fillets thicken with lightweight fillers like microballoons.
