I don't know that I would recommend that. Perhaps 10oz. cloth is better able to take the epoxy w/o sagging, but my dad and I built two in '86 and covered them in glass cloth and matting (but we used PE resin) and the glass cloth on the first one stretched and sagged between the stringers (probably 4 oz cloth, don't know for certain). We then used the FG matting and another layer of cloth. Big mistake, it made both kayaks considerably heavier (although on the second kayak, my dad put a lightweight canvas on first to avoid the sag of the first layer of FG cloth) so that even though they are one person kayaks, it takes two people to carry them.

Tom Yost has recommended using, in other posts, (and I am leaning toward using it on my future kayak) PVC coated Polyester fabric, approx. 18 oz. Alternatively, I highly recommend going with Paul J's recommendation of using uncoated PE and putting your own waterproofing coating on it (I have not ruled this one out entirely either). Nylon can also be used and would be stronger, but nylon can shrink if it gets wet and if the waterproofing coating breaks down there is a good possibility that it will shrink. PE, from my own investigations, will shrink when exposed to heat which means it can be shrunk fit to a frame and you don't have to worry about future shrinking due to a breakdown in the waterproofing coating.
