OK, here's my (somewhat biased, since I want to take it for a spin) $0.02 worth. The damage doesn't look to me like it went past the end pours and it doesn't look like the waterline length has changed much. I'd just cut a new bow and stern profile and fair it as is. The less you cut off the less fairing you need to do to get a good shape. The idea of cutting off the stern and adding laminated strips should be easy enough but honestly, unless you've lost a lot more length than it looks like, just use a grinder or rasp where you go into solid epoxy and just re-shape a new bow and stern. Might not look like a museum piece but it would keep the questions and stories flowing - sort of like a badge of honor. Let her scars show.

On the other hand, if you're still hard at work when I'm up for our visit, I could wait for you to finish in the back yard beer garden. You know, drinking beer and getting YOUR money's worth out of it! Of course, best of both worlds would be a nice paddle followed by recovery in the BYBG. I think I like that one. Get busy!
