Shawn,

Seems to me that there are 2 ways for a hull to respond to a lean.

The first is what you are talking about: The ends come up out of the water and the boat loosens up and gets easier to turn.

The second way: The hull becomes a banana when leaned. If you can, figure out at several stations what is the centroid of the submerged volume. Connect the centroids with a line. If the line is curved in the leaned configuration, the boat will carve a turn.
