Don't ask me about paddles, I have issues with making those (I have a half finished paddle that someday I will complete )
As for Guillemot size. I built a Guillemot for my wife, and it is a bit too small for me. I am a bit bigger than you 6'4", 240 lbs, size 13-14 feet. I feel cramped in her boat, which is why I am now building a Guillemot L for myself.
I have no experience or knowledge with the other designs, but from what I hear if you call/email the designer most of them will point you in the right direction.
