I wouldn't get caught up in the idea that there is one and only one best method for building boats. There are many good methods...and sometimes combining certain aspects of two, three, or more builders ideas and methods will be the way to go. Any of the better known kayak builders and plan sellers obviously have developed methods that work. I won't name any of them because I'm sure I'd forget a few and I wouldn't want to slight them. The information you get on this forum is invaluable...however you still have to use common sense when reading the ideas and methods. Some work, some don't. If you have any specific questions use the search feature of this forum. You'll probably find some good information. You can also use a search engine like google and look for more good stuff. The same for the paddles and paddle building. Just for basics on paddles you might start with a site like lightning paddles and read their "paddles 101" and the "paddle info" section.
