To elaborate on Shawns answer:
Most of the shape of a kayak is in the hull and the part that is in the water is much more important to get accurate. As long as you don't raise the deck so high that it catches more wind than designed you should be OK with almost anything you can dream up. The other thing is that strip building is flexible. You can accomodate changes in deck shape from round to flat that might be difficult with S & G. And if something doesn't work out quite right, tear it out and start over. Restripping a section of deck does not take that long.
